No-Bake Strawberry Cheesecake Bars

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 ½ cups heavy whipping cream

2 cups fresh strawberries, hulled and sliced

¼ cup strawberry jam

Fresh mint leaves for garnish (optional)

Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the texture resembles wet sand. Press the mixture firmly into the bottom of an 8x8-inch baking pan to form an even layer. Chill in the refrigerator while preparing the filling.

    Make the cream cheese filling: In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and creamy, about 2-3 minutes.

      Whip the cream: In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined. Be careful not to deflate the whipped cream.

        Assemble the cheesecake layer: Pour the cream cheese filling over the prepared crust, spreading it evenly. Add sliced strawberries on top of the cheesecake layer, gently pressing them in slightly.

          Add strawberry jam: In a small microwave-safe bowl, warm the strawberry jam for about 15 seconds to make it easier to spread. Drizzle the warmed jam over the berries and cheesecake, creating a swirled effect with a knife.

            Chill: Cover the baking pan with plastic wrap and refrigerate for at least 4 hours (or overnight) to allow the cheesecake to set properly.
