8 oz cream cheese, softened

1 cup Greek yogurt (plain or vanilla)

1/2 cup powdered sugar

1/4 cup fresh lemon juice

Zest of 1 lemon

1 tsp vanilla extract

1 1/2 cups crushed graham crackers

1/4 cup unsalted butter, melted

2 tbsp honey or maple syrup (for drizzling)

Fresh berries (optional, for garnish)

Mint leaves (optional, for garnish)

Instructions
 

In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.

    Add the Greek yogurt, powdered sugar, fresh lemon juice, lemon zest, and vanilla extract to the bowl. Mix until everything is well combined and fluffy.

      In another bowl, combine the crushed graham crackers with the melted butter and mix until the cracker crumbs are evenly coated.

        In serving glasses or jars, start by layering about 2-3 tablespoons of the graham cracker mixture at the bottom.

          Spoon a layer of the lemon cheesecake mixture over the graham cracker layer, filling the glass about halfway.

            Repeat the layers until the glasses are filled to the top, finishing with a final layer of the lemon cheesecake.

              Drizzle a bit of honey or maple syrup on top of each parfait for added sweetness.

                Garnish with fresh berries and mint leaves if desired.

                  Refrigerate the parfaits for at least 2 hours before serving to allow the flavors to meld and to firm up the cheesecake layer.
