1 cup graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/4 cup ground cinnamon

1/2 cup powdered sugar

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1/2 tsp vanilla extract

1/4 cup semi-sweet chocolate chips (optional)

Additional ground cinnamon and sugar mixture for coating

In a mixing bowl, combine graham cracker crumbs, shredded coconut, and 1/4 cup of ground cinnamon. Mix well to ensure that the ingredients are evenly distributed.

    In another bowl, combine peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Pour the wet mixture into the dry mixture and mix thoroughly until all the crumbs are moistened. If the mixture feels too crumbly, add a tiny bit more peanut butter or honey to help it come together.

        Once the mixture is well incorporated, use your hands to form small bite-sized balls, about 1 inch in diameter. Press them firmly to ensure they hold together.

          If using chocolate chips, gently fold them into the mixture before rolling into balls for a delightful surprise inside.

            In a shallow plate, mix together additional sugar and ground cinnamon (about 2 tablespoons of sugar to 1 tablespoon of cinnamon).
