Ingredients

1 cup rolled oats

½ cup natural peanut butter or almond butter

½ cup honey or maple syrup

½ cup unsweetened cocoa powder

½ cup chocolate chips (semi-sweet or dark)

1 tsp vanilla extract

A pinch of salt

Optional: ¼ cup shredded coconut or chopped nuts for added texture

Instructions

Prepare Your Workspace: Line a baking sheet with parchment paper to prevent sticking and set aside.

Combine Wet Ingredients: In a medium saucepan over low heat, add the peanut butter (or almond butter), honey (or maple syrup), and vanilla extract. Stir gently until the mixture is smooth and well combined.

Mix in Dry Ingredients: Remove the pan from heat and add the cocoa powder and a pinch of salt. Stir until fully incorporated.

Add Oats and Chocolate Chips: Gradually fold in the rolled oats until they are fully coated in the chocolate mixture. Finally, gently mix in the chocolate chips (and coconut or nuts if using), allowing them to melt slightly into the warm mixture to create a gooey texture.

Form Cookies: Using a tablespoon or cookie scoop, drop heaping spoonfuls of the mixture onto the prepared baking sheet. Flatten them slightly with the back of the spoon to form cookie shapes.

Chill to Set: Place the baking sheet in the refrigerator for at least 30 minutes, or until the cookies are firm and set.

Serve and Enjoy: Once set, remove the cookies from the fridge and serve them chilled. They can be stored in an airtight container in the fridge for up to a week.
