1 cup graham cracker crumbs

2 tablespoons sugar

1/2 teaspoon cinnamon

1/4 cup unsalted butter, melted

8 oz (225g) cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the blueberry topping:

2 cups fresh blueberries

1/4 cup sugar

1 tablespoon lemon juice

1 teaspoon cornstarch (optional, for thickening)

1 tablespoon water (if using cornstarch)

For garnishing:

Extra blueberries

Fresh mint leaves (optional)

Prepare the crust:

    In a medium bowl, combine the graham cracker crumbs, sugar, and cinnamon. Add the melted butter and mix until the crumbs are evenly coated. The mixture should have a damp sand-like consistency.

      Press the crust into jars:

        Spoon the crust mixture evenly into the bottom of 4 to 6 small mason jars or dessert cups. Use the back of a spoon to press the crumbs down firmly. Set aside.

          Make the cheesecake filling:

            In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until combined.

              Whip the cream:

                In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and smooth. Be careful not to deflate the whipped cream.

                  Layer the jars:

                    Divide the cheesecake filling evenly among the jars over the crust layer, smoothing the top with a spatula.

                      Prepare the blueberry topping:

                        In a saucepan over medium heat, add the blueberries, sugar, and lemon juice. Stir gently until the blueberries start to soften and release their juices. If using cornstarch, mix it with water to create a slurry, then add it to the pan. Cook for an additional 2-3 minutes until the mixture thickens slightly. Remove from heat and let cool for a few minutes.

                          Assemble the no-bake cheesecake jars:

                            Once the blueberry topping has cooled, spoon it generously over the cheesecake layers in each jar.

                              Chill the jars:

                                Place the jars in the refrigerator for at least 2 hours (or overnight for best results) to allow the flavors to meld and the cheesecake to set.

                                  Garnish and serve:
