1 cup soft cream cheese (room temperature)

1/4 cup powdered sugar

1 tsp vanilla extract

1/2 cup rainbow sprinkles (plus more for coating)

1 cup white chocolate chips (for coating)

1 tsp coconut oil (for smooth melting)

Instructions
 

Mix the Base: In a large mixing bowl, combine the birthday cake mix, cream cheese, powdered sugar, and vanilla extract. Mix until the ingredients are fully combined and the mixture is smooth.

    Add Sprinkles: Gently fold in 1/2 cup of rainbow sprinkles into the mixture. This will give your truffles that fun, festive look.

      Chill the Mixture: Cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes. This will firm up the mixture, making it easier to scoop.

        Shape the Truffles: Once chilled, use a small cookie scoop or your hands to shape the mixture into small balls, roughly 1 inch in diameter. Place the formed balls on a baking sheet lined with parchment paper.

          Chill Again: Place the baking sheet in the refrigerator for another 30 minutes to set the truffles further.

            Melt the Chocolate: While the truffles are chilling, microwave the white chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until melted and smooth.
