Ingredients

1 pound ground beef

1 cup finely chopped mushrooms (button or cremini)

1 small onion, finely diced

2 cloves garlic, minced

1 cup breadcrumbs (preferably seasoned)

1 large egg, beaten

1 cup shredded Swiss cheese

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional, for garnish)

¼ cup ketchup (for glaze)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper for easy cleanup.

Sauté Vegetables: In a skillet over medium heat, add a splash of olive oil. Once hot, sauté the chopped mushrooms, onion, and garlic until the mushrooms are cooked through and softened (about 5-7 minutes). Set aside to cool slightly.

Mix Ingredients: In a large mixing bowl, combine the ground beef, sautéed mushroom mixture, breadcrumbs, egg, Worcestershire sauce, Dijon mustard, thyme, salt, and black pepper. Mix until just combined; be careful not to overmix.

Add Cheese: Fold in the shredded Swiss cheese gently, reserving a handful to sprinkle on top later.

Shape the Meatloaf: Transfer the meat mixture into the prepared baking dish, shaping it into a loaf. Make sure the top is slightly flat for even cooking.

Glaze the Meatloaf: Spread the ketchup evenly on top of the meatloaf. Sprinkle the reserved Swiss cheese over the ketchup for added flavor.

Bake: Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).

Rest and Garnish: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps retain moisture. Serve garnished with fresh parsley if desired.
