2 slices of whole grain or sourdough bread

1 ripe avocado

1 cup of mixed mushrooms (cremini, shiitake, or button), sliced

2 tablespoons olive oil

1 garlic clove, minced

1 tablespoon balsamic vinegar

Salt and black pepper, to taste

1 tablespoon fresh lemon juice

Crushed red pepper flakes (optional)

Fresh parsley or chives, for garnish
