2 ripe avocados

200g mixed mushrooms (such as cremini, shiitake, and oyster), sliced

1 clove garlic, minced

1 tablespoon olive oil

1 teaspoon fresh thyme leaves

Juice of 1/2 lemon

Salt, to taste

Black pepper, to taste

4 slices of whole-grain bread

Optional toppings: red pepper flakes, microgreens, or a poached egg

Sauté the Mushrooms: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Toss in the sliced mushrooms along with the fresh thyme.
