6 large eggs

1/2 cup milk (whole or your preferred dairy alternative)

1 cup diced bell peppers (mix of colors)

1/2 cup diced cooked ham or cooked bacon (optional)

1/2 cup baby spinach, chopped

1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs for garnish (optional, like parsley or chives)

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or olive oil.

    Whisk the Eggs: In a large mixing bowl, crack the eggs and add the milk. Whisk vigorously until fully combined and frothy.

      Add Seasonings: Stir in the onion powder, garlic powder, salt, and pepper to the egg mixture. Adjust the seasoning to your taste.

        Incorporate the Fillings: Add in the diced bell peppers, cooked ham or bacon, chopped baby spinach, and shredded cheese. Fold everything gently into the egg mixture until evenly distributed.
