Mojito Berry Pops

Beat the summer heat with refreshing Mojito Berry Pops! These vibrant frozen treats combine the classic Mojito flavors of mint, lime, and fresh berries for a delightful and guilt-free indulgence. Perfect for parties or a relaxing day in the sun, these pops are easy to make using simple ingredients like fresh fruit, mint, and coconut water. Ingredients
  

1 cup fresh mint leaves, packed

2 tablespoons granulated sugar (or to taste)

1 cup fresh lime juice (approximately 8 limes)

1 cup water

1 cup fresh strawberries, hulled and quartered

1 cup fresh blueberries

1 cup coconut water (or soda water for a fizzy version)

Lime slices and mint sprigs for garnish (optional)

Instructions
 

Make the Mint Syrup: In a small saucepan over medium heat, combine the fresh mint leaves and granulated sugar with 1 cup of water. Allow the mixture to come to a gentle boil, then reduce the heat and simmer for about 5 minutes, until the sugar has dissolved and the mint is fragrant. Remove from heat and let it cool completely. Strain the syrup to remove the mint leaves, and set aside.

    Prepare the Berry Mixture: In a large bowl, combine the quartered strawberries and blueberries. Drizzle approximately 1/4 cup of the mint syrup over the berries and gently toss to coat. Allow them to marinate for about 10-15 minutes.

      Mix the Mojito Base: In another bowl, combine the fresh lime juice and the remaining mint syrup to your taste, adding more sugar if desired. Stir in the coconut water or soda water to create a refreshing Mojito base.

        Assemble the Pops: Layer the marinated berries in the bottom of your popsicle molds. Carefully pour the Mojito mixture over the berries, leaving a little space at the top to allow for expansion when freezing.

          Insert Sticks and Freeze: Place the popsicle sticks into the molds and ensure they're standing upright. Transfer the molds to the freezer, and freeze for at least 4-6 hours or until solid.

            Remove and Serve: To remove the pops, run warm water over the outside of the molds for a few seconds. Carefully pull on the sticks to release the Mojito Berry Pops. Garnish with lime slices and mint sprigs if desired, and enjoy!
