1 cup water

Instructions
 

Create the Mochi Base:

    - In a microwave-safe bowl, combine the sweet rice flour and sugar. Gradually add the water, stirring until it forms a smooth batter.

      Cook the Mochi:

        - Cover the bowl with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 1 minute, then stir. Cover again and microwave for another minute. Repeat this process one more time until the mixture is sticky and translucent (total cooking time about 3 minutes).

          Cool the Mochi:

            - Dust a clean surface or a large plate with cornstarch or potato starch. Turn the cooked mochi onto the dusted surface and let it cool slightly, about 5 minutes. Be careful, as it may still be hot.

              Shape the Mochi:

                - Once the mochi is cool enough to handle, dust your hands with starch and divide the mochi into small pieces (about the size of a golf ball). Flatten each piece into a round shape, approximately 1/4 inch thick.

                  Assemble the Sandwiches:
