12 oz dark chocolate (70% cocoa or higher), chopped

1 cup fresh mint leaves, loosely packed

1 tsp peppermint extract

1/4 cup crushed pistachios (or almonds) for topping

1/4 cup dried cranberries or cherries, roughly chopped

Sea salt, for sprinkling

Parchment paper, for lining the baking sheet

Instructions
 

Melt the Chocolate: In a heatproof bowl, combine the chopped dark chocolate and place it over a saucepan of simmering water (double boiler method). Stir frequently until the chocolate is completely melted and smooth. Remove from heat.

    Infuse the Mint: While the chocolate is melting, place the fresh mint leaves in a small pot with about 1/4 cup of water. Bring to a simmer, then remove from heat and let steep for about 10 minutes. Strain out the mint leaves and set the infused water aside.

      Combine Flavors: Stir the peppermint extract into the melted chocolate, followed by 2 tablespoons of the mint-infused water. Mix well until all ingredients are incorporated and you achieve a fragrant minty aroma.

        Prepare the Baking Sheet: Line a baking sheet with parchment paper, smoothing it out to ensure an even surface.

          Spread the Chocolate: Pour the melted chocolate onto the prepared baking sheet. Use a spatula to spread it out evenly to about 1/4-inch thickness.

            Add Toppings: While the chocolate is still warm, sprinkle the crushed pistachios and dried cranberries (or cherries) evenly over the surface. Lightly press them in to help them adhere. Finish by sprinkling a pinch of sea salt on top.

              Chill and Set: Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate is completely hardened.

                Break and Serve: Once set, remove the chocolate from the fridge. Lift the parchment paper with the chocolate bark off the baking sheet and break it into pieces.
