4 small whole wheat tortillas

1 cup shredded mozzarella cheese

1/2 cup black beans (canned, rinsed and drained)

1/2 cup corn (frozen or canned, drained)

1/2 cup diced bell peppers (mix of red, yellow, and green)

1/4 cup finely chopped red onion

1/4 cup chopped fresh spinach

1 teaspoon taco seasoning

1 tablespoon olive oil (for brushing)

Salsa and sour cream (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Filling: In a large mixing bowl, combine the black beans, corn, bell peppers, red onion, spinach, and taco seasoning. Mix well until all the ingredients are evenly coated with the seasoning.

      Assemble the Quesadillas: Place one tortilla on a flat surface. Sprinkle a layer of mozzarella cheese on half of the tortilla. Add a generous spoonful of the veggie mixture on top of the cheese, then add another sprinkle of cheese over the veggies. Fold the tortilla over to create a half-moon shape. Repeat this step with all the tortillas.

        Brush and Bake: Place the quesadilla triangles on a baking sheet lined with parchment paper. Brush the tops with olive oil to help them crisp up in the oven.

          Bake the Quesadillas: Bake in the preheated oven for about 10-12 minutes, or until the tortillas are golden brown and the cheese is melted. If you'd like them extra crispy, you can broil them for an additional 1-2 minutes, watching closely to prevent burning.

            Cut and Serve: Remove from the oven and let cool slightly. Using a sharp knife or pizza cutter, slice each quesadilla into 4 triangles. Serve warm with salsa and sour cream on the side for dipping.
