12 mini sweet bell peppers (halved and seeds removed)

1 can (5 oz) tuna in water, drained

1/4 cup mayonnaise

1/4 cup plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 cup shredded cheddar cheese (plus extra for topping)

1/4 cup chopped green onions

Salt and pepper to taste

Olive oil (for drizzling)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Wash and slice the mini sweet bell peppers in half lengthwise. Remove the seeds and white membranes. Arrange the pepper halves cut side up on a baking sheet.

      Make the Tuna Filling: In a medium mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, and half of the cheddar cheese. Mix until well combined. Season with salt and pepper to taste.

        Stuff the Peppers: Using a spoon, generously fill each pepper half with the tuna mixture.

          Top with Cheese: Sprinkle the remaining cheddar cheese over the stuffed peppers. Add some additional green onions on top for garnish.

            Drizzle with Olive Oil: Lightly drizzle olive oil over the stuffed peppers to enhance flavor and promote browning.

              Bake: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly, and the peppers are just tender.
