1 pound breakfast sausage, casings removed

6 large eggs

1/4 cup milk

Salt and pepper, to taste

6 English muffins, split and toasted

6 slices cheddar cheese (or your cheese of choice)

1 tablespoon olive oil

Optional: hot sauce or salsa for serving

Optional: fresh herbs (like chives or parsley) for garnish

Instructions
 

Prepare the Sausage Patties: In a skillet over medium heat, add the breakfast sausage. Using a spatula, break it apart and cook until browned and fully cooked, about 5-7 minutes. Drain any excess grease and set aside.

    Whisk the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

      Cook the Eggs: In the same skillet, add olive oil and heat over medium-low heat. Pour in the egg mixture. Stir gently with a spatula, cooking until the eggs are just set but still moist, about 3-4 minutes. Remove from heat.
