1 cup all-purpose flour

1/2 cup pumpkin puree

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup buttermilk

1 large egg

3 tablespoons melted butter

Cooking spray

For the Filling:

1 cup scrambled eggs (about 4 eggs)

1/2 cup cooked and crumbled breakfast sausage or plant-based alternative

1/2 cup shredded cheddar cheese

1/4 cup chopped fresh cilantro

Optional: hot sauce for serving

For the Maple Yogurt Drizzle:

1/2 cup Greek yogurt

2 tablespoons maple syrup

Pinch of cinnamon

Preheat and Prep: Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the buttermilk, pumpkin puree, egg, and melted butter until smooth.
