1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup unsweetened cocoa powder

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 tablespoon red food coloring

For the Stuffed Oreo Filling:

1 package (15.35 oz) Oreo cookies, crushed (reserve some for topping)

8 oz cream cheese, softened

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

For the Cheesecake Layer:

8 oz cream cheese, softened

1/4 cup granulated sugar

1/4 cup sour cream

1 large egg

1 teaspoon vanilla extract

Instructions
 

Prepare the Red Velvet Cookie Dough Base:

    - In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.

      - In another large bowl, cream together the softened butter and brown sugar until light and fluffy.

        - Beat in the egg, followed by the vanilla extract and red food coloring until fully combined.

          - Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.

            - Fold in the crushed Oreo cookies (reserve about 1/2 cup for topping).

              Create the Oreo Filling:

                - In a mixing bowl, beat the softened cream cheese until smooth.

                  - Mix in the powdered sugar and vanilla extract until well combined.

                    - Gently fold in any remaining crushed Oreos until evenly distributed.

                      Make the Cheesecake Layer:

                        - In another bowl, beat together the softened cream cheese and granulated sugar until smooth.

                          - Add the sour cream, egg, and vanilla extract, mixing until just combined. Do not overmix.

                            Assemble the Cheesecakes:

                              - Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
