Ingredients

24 Oreo cookies (divided, 12 whole and 12 crushed)

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup mini chocolate chips (for topping; optional)

Whipped cream (for garnish; optional)

Instructions

Prepare the crust: In a medium bowl, combine the crushed Oreo cookies with melted butter. Mix until the crumbs are fully coated and the mixture resembles wet sand.

Form the base: Line a muffin tin with cupcake liners. Evenly distribute the Oreo crumb mixture among the liners (about 1 tablespoon each), pressing down firmly to create a crust. Set aside.

Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until well combined.

Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and creamy.

Assemble the cheesecakes: Spoon or pipe the cheesecake filling onto the prepared Oreo crusts, filling them about 3/4 full. Smooth the tops with a spatula or the back of a spoon.

Chill: Place the mini cheesecakes in the fridge for at least 4 hours (or overnight) to set properly.

Garnish and serve: Once set, top your mini cheesecakes with additional crushed Oreos, mini chocolate chips, and a dollop of whipped cream if desired. Serve chilled and enjoy!
