6 mini bagels (plain or everything)

4 large eggs

1/4 cup milk

1/2 cup shredded sharp cheddar cheese

1/4 cup diced bell pepper (any color)

1/4 cup diced cooked ham or cooked bacon (optional)

1/4 teaspoon salt

1/4 teaspoon black pepper

Fresh chives or green onions, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Bagels: Slice each mini bagel in half horizontally and place them cut-side up on the prepared baking sheet.

      Mix the Egg Mixture: In a medium mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Stir in the shredded cheddar cheese, diced bell peppers, and ham or bacon if using.

        Fill Bagels: Using a spoon or a small measuring cup, carefully pour the egg mixture evenly onto each bagel half, filling them just to the edge without spilling over.

          Bake: Place the baking sheet in the oven and bake for 15-20 minutes, or until the egg is set and begins to puff up slightly. The cheese should be melted and the edges of the bagels golden brown.
