Mini Chicken Taco Cups

1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1/2 cup water

1 cup shredded cheese (cheddar or Mexican blend)

1 package of mini phyllo pastry cups (15 cups)

1/2 cup cherry tomatoes, diced

1/4 cup fresh cilantro, chopped

1 avocado, diced

1/2 cup sour cream

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Season the Chicken: Add the ground chicken to the skillet. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

        Mix in Seasoning: Stir in the taco seasoning and water. Bring to a simmer, then reduce heat to low. Let it simmer for 5 minutes, or until the liquid has mostly evaporated.

          Fill the Cups: Place the mini phyllo cups on a baking sheet. Spoon the seasoned chicken mixture into each cup, filling them generously.

            Add Cheese: Top each filled cup with shredded cheese, dividing it evenly among all the cups.

              Bake: Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the phyllo cups are golden brown.

                Garnish: Remove the taco cups from the oven and let them cool slightly. Garnish each cup with diced cherry tomatoes, avocado, fresh cilantro, and a dollop of sour cream.
