Mini Chicken Taco Biscuit Melts

1 can (16.3 oz) refrigerated biscuit dough

1 lb ground chicken

1 packet taco seasoning (about 2 tablespoons)

1/2 cup shredded cheddar cheese

1/2 cup diced tomatoes (fresh or canned)

1/4 cup diced red onion

1/4 cup sour cream

1/4 cup chopped fresh cilantro

Cooking spray or olive oil for greasing

Optional: sliced jalapeños for added heat

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or olive oil.

    Cook the Chicken: In a medium skillet over medium heat, add the ground chicken and sauté until fully cooked (about 7-10 minutes). Drain any excess fat if necessary.

      Add Seasoning: Stir in the taco seasoning and a splash of water (about 2 tablespoons) to the cooked chicken. Mix until the seasoning is evenly distributed and cook for an additional 2-3 minutes. Remove from heat and set aside.

        Prepare the Biscuits: Open the can of biscuit dough and separate it into individual biscuits. Using a rolling pin or your hands, flatten each biscuit until they are about 1/4 inch thick.

          Assemble the Melts: Place each flattened biscuit into the greased mini muffin cups, pressing the dough lightly into the bottom and sides to create a small cup.

            Fill with Chicken: Spoon a teaspoon of the seasoned chicken mixture into each biscuit cup, filling them about three-quarters full.

              Add Toppings: Sprinkle a small amount of shredded cheddar cheese on top of each filled biscuit. Add diced tomatoes and a few pieces of red onion for freshness.

                Bake: Place the mini muffin tin in the preheated oven and bake for 12-15 minutes or until the biscuits are golden brown and the cheese has melted.
