Mini Buffalo Chicken Biscuit Rings

2 cups shredded cooked chicken

1/2 cup buffalo sauce (adjust based on spice level preference)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 package (8 oz) refrigerated biscuit dough

1 tablespoon olive oil

Fresh parsley or green onions, chopped for garnish

Ranch or blue cheese dressing for serving (optional)

Instructions
 

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the buffalo chicken mixture: In a large bowl, combine the shredded chicken, buffalo sauce, cream cheese, garlic powder, onion powder, and half of the shredded cheddar cheese. Mix thoroughly until the mixture is well blended.

      Roll out the biscuit dough: On a lightly floured surface, roll one biscuit at a time into a flat circle about 1/4 inch thick. Use your fingers to create a slight edge around the perimeter.

        Fill the biscuits: Place a generous tablespoon of the buffalo chicken mixture in the center of each flattened biscuit. Be careful not to overfill.

          Form the rings: Carefully bring the edges of the dough up over the filling to create a ring shape. Pinch the seams together to seal the filling inside. If desired, you can also create a twisted design by rolling the edges slightly.

            Brush with olive oil: Place the biscuit rings on the prepared baking sheet. Lightly brush the tops with olive oil to encourage browning.

              Add more cheese: Sprinkle the remaining shredded cheddar cheese over the tops of the biscuit rings.

                Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the biscuit rings are golden brown and cooked through.

                  Garnish and serve: Once baked, remove from the oven and let them cool slightly. Garnish with fresh parsley or chopped green onions. Serve warm with ranch or blue cheese dressing for dipping.
