2 cups hash browns, frozen and thawed

1 cup cheddar cheese, shredded

4 large eggs

½ cup milk

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

1 cup cooked bacon or sausage, crumbled (optional)

Fresh chives or green onions, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin with cooking spray or line it with muffin liners.

    Prepare Hash Brown Base: In a large mixing bowl, combine the thawed hash browns with half of the cheddar cheese (1/2 cup), and season with salt, black pepper, garlic powder, and onion powder. Mix well until the hash browns are evenly coated.

      Form the Cups: Divide the hash brown mixture evenly among the muffin tins, pressing the mixture firmly into the bottom and up the sides of each cup to create a nest-like shape.

        Pre-bake: Place the muffin tin in the oven and bake the hash brown cups for about 15 minutes, or until they are golden and crispy.

          Prepare Filling: While the hash browns are baking, whisk together the eggs, milk, and a pinch of salt and pepper in a separate bowl. If you're using bacon or sausage, fold it into the egg mixture.

            Fill the Hash Brown Cups: Once the hash brown cups are pre-baked, carefully remove them from the oven. Pour the egg mixture into each cup, filling them about three-quarters full. Sprinkle the remaining cheddar cheese on top of each cup.

              Bake Again: Return the muffin tin to the oven and bake for an additional 15-18 minutes, or until the egg is set and the tops are slightly golden.

                Cool and Serve: Remove the muffin tin from the oven and let it cool slightly. Carefully remove each hash brown muffin cup using a small offset spatula or knife. Garnish with freshly chopped chives or green onions, and serve warm.
