Mini Breakfast Burrito Bites

6 large eggs

1/4 cup milk

1/2 cup diced bell peppers (red, green, or yellow)

1/2 cup diced onions

1/2 cup cooked and crumbled breakfast sausage or bacon

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped (optional)

Salt and pepper to taste

1 package of small flour tortillas (street taco size)

Cooking spray or olive oil for greasing the pan

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk. Season with salt and pepper. Stir in the bell peppers, onions, cooked sausage or bacon, and half of the cheddar cheese (reserve the other half for topping).

      Prepare the Mini Muffin Tin: Lightly grease a mini muffin tin with cooking spray or olive oil.

        Assemble Burrito Bites: Use a small tortilla and cut each one into quarters. Take one quarter and press it into the bottom and sides of each muffin cup to create a little bowl. Repeat until all cups are lined.

          Fill the Cups: Spoon the egg mixture into each tortilla-lined cup, filling about three-quarters full. Top each with a sprinkle of the remaining cheddar cheese.

            Bake: Place the muffin tin in the preheated oven and bake for about 15-18 minutes, or until the egg is set, and the cheese is melted.

              Cool & Remove: Once cooked, remove the muffin tin from the oven and let it cool for a couple of minutes. Carefully use a fork or small spatula to lift each burrito bite out of the tin.

                Garnish: If desired, garnish with fresh cilantro before serving.

                  Serve: Enjoy warm as a delicious grab-and-go breakfast or as a party appetizer!
