1 lb cooked shredded chicken

1 cup BBQ sauce (your choice)

1 cup cornmeal

1 cup all-purpose flour

1/2 cup sugar

1 tbsp baking powder

1/2 tsp salt

1 cup milk

2 large eggs

1/2 cup vegetable oil

1 cup shredded cheddar cheese

1/2 cup chopped green onions (optional for garnish)

Fresh cilantro (optional for garnish)

Instructions
 

Preheat Your Oven: Preheat the oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.

    Prepare the BBQ Chicken: In a medium bowl, combine the shredded chicken with the BBQ sauce. Mix thoroughly until all the chicken is well-coated. Set aside.

      Make the Cornbread Batter: In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.

        Combine Wet Ingredients: In a separate bowl, whisk together the milk, eggs, and vegetable oil until blended.

          Mix Together: Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid over-mixing; a few lumps are okay!

            Fill the Muffin Tin: Spoon about 2 tablespoons of the cornbread batter into each muffin cup, filling them about halfway. Follow this by adding a heaping tablespoon of the BBQ chicken mixture on top.
