Ingredients

1 can (16.3 oz) refrigerated flaky biscuit dough

1 cup cooked rotisserie chicken, shredded

1/2 cup BBQ sauce (your choice, sweet or tangy)

1 cup shredded cheddar cheese

1/4 cup green onions, chopped (optional)

1 egg (for egg wash)

1 tbsp garlic powder

1 tbsp onion powder

Salt and pepper, to taste

Cooking spray or parchment paper for baking

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly spray with cooking spray.

Prepare the Chicken Filling: In a mixing bowl, combine the shredded rotisserie chicken and BBQ sauce. Mix well until the chicken is evenly coated. If desired, stir in chopped green onions for added flavor.

Roll Out the Biscuits: Open the can of biscuit dough and separate the individual biscuits. Flatten each biscuit with your hands or a rolling pin to form a circular shape, about 4 inches in diameter.

Add the Filling: In the center of each flattened biscuit, place about 1-2 tablespoons of the BBQ chicken mixture. Top the chicken filling with 1 tablespoon of shredded cheddar cheese.

Seal the Bombs: Carefully fold the edges of the biscuit dough over the filling, pinching them together to seal completely. Place the sealed side down on the prepared baking sheet.

Prepare the Egg Wash: In a small bowl, whisk the egg with a pinch of salt. Brush the top of each biscuit bomb with the egg wash to give them a beautiful golden color when baked.

Season the Tops: Sprinkle a little garlic powder, onion powder, salt, and pepper over the top of each biscuit bomb for extra flavor.

Bake: Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the biscuit bombs are golden brown and cooked through.

Cool and Serve: Remove from the oven and let cool for a few minutes. Serve warm, optionally drizzling additional BBQ sauce on top or using it as a dip.

Enjoy these delightful Mini BBQ Chicken Biscuit Bombs as a perfect appetizer or a fun party snack!
