1 cup elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

2 cups milk

1/4 cup unsalted butter

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (panko preferred)

1/4 cup grated Parmesan cheese

Cooking spray or oil for greasing muffin pan

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin pan with cooking spray or oil.

    Cook the Pasta: In a large pot, bring water to a boil and add a pinch of salt. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce: In a saucepan over medium heat, melt the butter. Once melted, add the flour and whisk continuously for about 1-2 minutes until it forms a roux. Gradually pour in the milk while whisking constantly to avoid lumps. Continue to cook and whisk until the mixture thickens, about 3-5 minutes.

        Add Seasoning: Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

          Incorporate the Cheese: Remove the saucepan from heat and add the shredded cheddar and mozzarella cheese to the sauce, stirring until completely melted and smooth.

            Combine Pasta and Sauce: Gently fold the cooked elbow macaroni into the cheese sauce until well combined.

              Fill Muffin Pan: Using a spoon or small ice cream scoop, fill each cup of the greased mini muffin pan with the mac and cheese mixture, pressing it down gently to pack it in.

                Prepare the Topping: In a small bowl, mix together the breadcrumbs and grated Parmesan cheese. Sprinkle this mixture over the mac and cheese filled cups.

                  Bake: Place the muffin pan in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and crispy.
