For the Pancakes:

1 cup all-purpose flour

2 tbsp sugar

1 tbsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1 cup milk

1 large egg

2 tbsp melted butter

1 medium apple, peeled and finely chopped (preferably Granny Smith)

For the Apple Cinnamon Filling:

1 medium apple, peeled and diced

2 tbsp brown sugar

1 tsp ground cinnamon

1 tbsp lemon juice

For Serving:

Maple syrup

Whipped cream (optional)

Extra apple slices (for garnish)

Instructions
 

Prepare the Apple Filling:

    - In a small bowl, combine the diced apple, brown sugar, cinnamon, and lemon juice. Mix well and set aside to let the flavors meld.

      Make the Pancake Batter:

        - In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.

          - In another bowl, mix the milk, egg, and melted butter until well combined.

            - Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the finely chopped apple.

              Cook the Pancakes:

                - Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

                  - Pour a tablespoon of batter onto the skillet for each mini pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter.

                    Assemble the Sliders:

                      - Take one mini pancake, spoon a small amount of the apple filling on top, and then place another mini pancake on top to form a slider. Repeat with the remaining pancakes and filling.

                        Serve:
