Mediterranean Orzo Bowl

Ingredients
  

1 cup of orzo pasta

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 yellow bell pepper, diced

1 cucumber, peeled and diced

1 can (15 oz) chickpeas, rinsed and drained

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup red onion, finely diced

1/4 cup fresh parsley, chopped

Juice of 1 lemon

3 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Instructions
 

Cook the Orzo:

    In a medium pot, bring the vegetable broth (or water) to a boil. Add the orzo pasta and cook according to package instructions, typically around 8-10 minutes, until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

      Prepare the Vegetables:

        In a large mixing bowl, combine the halved cherry tomatoes, diced yellow bell pepper, diced cucumber, chickpeas, Kalamata olives, and red onion. Toss gently to mix.

          Make the Dressing:

            In a small bowl, whisk together the lemon juice, olive oil, dried oregano, garlic powder, salt, and pepper. Adjust seasoning to taste.

              Combine Ingredients:

                Add the cooked orzo to the bowl of vegetables. Drizzle with the dressing and toss gently until everything is well coated. If desired, you can add additional salt and pepper to taste at this stage.

                  Add Cheese and Herbs:

                    Fold in the crumbled feta cheese and chopped parsley, mixing gently to combine without breaking the cheese too much.

                      Serve:

                        Portion the Mediterranean Orzo Bowl into serving bowls. Serve immediately, or refrigerate for about 30 minutes for a chilled version. This dish also keeps well in the refrigerator for up to 3 days.
