2 cups all-purpose flour

1 cup warm water (about 110°F)

2 tablespoons olive oil

1 teaspoon sugar

1 teaspoon salt

1 packet (2 ¼ teaspoons) instant yeast

½ teaspoon dried oregano

½ teaspoon garlic powder

½ cup Kalamata olives, pitted and chopped

½ cup crumbled feta cheese

1 cup cherry tomatoes, halved

Fresh basil leaves for garnish

Extra olive oil for drizzling

Freshly cracked black pepper to taste

Prepare the Dough: In a large mixing bowl, combine warm water, sugar, and instant yeast. Let it sit for about 5 minutes until it becomes frothy. Stir in the olive oil.

    Mix the Dry Ingredients: In a separate bowl, whisk together the flour, salt, dried oregano, and garlic powder.

      Combine: Gradually add the dry mixture to the yeast mixture, stirring until a dough begins to form.

        Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

          Let it Rise: Form the dough into a ball, place it in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until it has doubled in size.

            Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

              Shape the Flatbread: Once the dough has risen, punch it down and divide it into 2-4 equal portions. Roll each portion into a flat circle about ¼ inch thick.

                Add Toppings: Place the rolled flatbreads onto a baking sheet or a preheated pizza stone. Evenly distribute the chopped Kalamata olives, cherry tomatoes, and crumbled feta over the top. Drizzle a little olive oil and sprinkle crack black pepper.

                  Bake: Bake the flatbreads in the preheated oven for 10-12 minutes, or until they are golden brown and crispy on the edges.
