1 pound baby carrots (or sliced regular carrots)

3 tablespoons soy sauce (low sodium preferred)

2 tablespoons pure maple syrup

1 tablespoon olive oil

1 tablespoon rice vinegar

1 teaspoon fresh ginger, grated

2 cloves garlic, minced

1 teaspoon sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Prepare the Carrots: If using regular carrots, peel and cut them into 1-inch pieces. If using baby carrots, leave them whole or cut them in half lengthwise.

    Make the Glaze: In a small bowl, whisk together the soy sauce, maple syrup, olive oil, rice vinegar, grated ginger, and minced garlic until well combined.

      Sauté the Carrots: In a large skillet over medium heat, add the carrots and a pinch of salt. Sauté for about 5 minutes, stirring occasionally, until they start to soften.

        Add the Glaze: Pour the maple-soy mixture over the sautéed carrots. Stir well to coat the carrots evenly.

          Cook Until Tender: Continue to cook the carrots for 8-10 minutes, stirring occasionally, until they are tender and the glaze thickens slightly. If the glaze gets too thick, you can add a splash of water to loosen it up.
