Ingredients

4 salmon fillets (about 6 ounces each)

1 cup pecans, finely chopped

1/2 cup bread crumbs (preferably panko for extra crunch)

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

Prepare the Pecan Mixture: In a medium bowl, combine the finely chopped pecans, bread crumbs, garlic powder, onion powder, salt, and black pepper. Mix well until evenly combined.

Prepare the Salmon Fillets: Pat the salmon fillets dry using paper towels. Place them skin-side down on the prepared baking sheet.

Make the Maple Glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, and olive oil. This will create a tangy and sweet glaze for the salmon.

Coat the Salmon: Brush the maple glaze generously over the top of each salmon fillet, ensuring that it’s well coated.

Add the Crust: Spoon the pecan mixture over the glazed salmon fillets, pressing down gently so it adheres. Make sure the fillets are evenly covered.

Bake the Salmon: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The pecan crust should turn golden brown and crispy.

Garnish and Serve: Once done, remove the salmon from the oven and let it rest for a couple of minutes. Garnish with freshly chopped parsley and serve with lemon wedges on the side for an added burst of flavor.
