Ingredients

8 chicken drumsticks

1/4 cup pure maple syrup

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken:

In a large mixing bowl, combine the maple syrup, Dijon mustard, apple cider vinegar, olive oil, minced garlic, smoked paprika, salt, black pepper, thyme, and red pepper flakes. Whisk together until well combined.

      Coat the Drumsticks:

Add the chicken drumsticks to the bowl and toss them in the marinade until fully coated. Cover the bowl with plastic wrap or transfer the drumsticks to a resealable plastic bag. Marinate in the refrigerator for at least 1 hour, or ideally overnight for maximum flavor.

          Preheat the Oven:

Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easier cleanup and place a wire rack on top.

              Bake the Chicken:

Remove the drumsticks from the marinade, allowing excess marinade to drip off, then place the drumsticks on the prepared wire rack. This ensures they cook evenly and allows the fat to drip away. Reserve the marinade for later.

                  Oven Cooking:

Bake the drumsticks in the preheated oven for 30-35 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C). Baste the drumsticks with the reserved marinade twice during baking for added flavor and moisture.

                      Broil for Extra Crispiness:

For an extra crispy finish, switch the oven to broil for the last 3-5 minutes of cooking. Keep a close eye on them to prevent burning!

                          Serve:

Once done, remove the drumsticks from the oven and let them rest for 5 minutes. Garnish with chopped parsley before serving. Pair with your favorite sides like roasted vegetables or a fresh salad.
