Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ cup unsalted butter, chilled and diced

1 cup sweet potato puree (approximately 1 medium sweet potato, cooked and mashed)

¼ cup maple syrup (plus extra for glazing)

¼ cup buttermilk

1 large egg, beaten (for egg wash)

Optional: Chopped pecans or walnuts for topping

Instructions

Prepare Sweet Potatoes: If using fresh sweet potatoes, preheat the oven to 400°F (200°C). Pierce the sweet potato with a fork and bake for about 45-60 minutes or until tender. Allow to cool, peel, and mash to get 1 cup of sweet potato puree.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

Incorporate Butter: Add the chilled, diced butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Combine Wet Ingredients: In a separate bowl, mix the sweet potato puree, maple syrup, and buttermilk until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined; it’s okay if there are a few lumps. Be careful not to overmix.

Shape Dough: Turn the dough out onto a floured surface. Gently pat it into a rectangle about 1-inch thick. Fold the dough over onto itself three times to create layers, then pat it down again to 1-inch thickness.

Cut Biscuits: Use a round biscuit cutter or a glass to cut out biscuits from the dough. Place them on a baking sheet lined with parchment paper, about 2 inches apart.

Prepare for Baking: Lightly brush the tops of the biscuits with the beaten egg for a golden finish. If desired, sprinkle chopped pecans or walnuts on top for added crunch.

Bake: Bake in the preheated oven for 15-20 minutes or until the tops are golden brown.

Glaze with Maple Syrup: Remove the biscuits from the oven and drizzle a little maple syrup over the tops while they are still warm for an added layer of sweetness.

Serve: Let cool slightly before serving warm with butter or additional maple syrup.
