Maple Dijon Sweet Potato Salad

4 medium sweet potatoes, peeled and cubed

1/4 cup olive oil

2 tablespoons maple syrup

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and black pepper to taste

1/2 red onion, finely chopped

1 cup cherry tomatoes, halved

1/2 cup chopped pecans (or walnuts)

1/4 cup fresh parsley, chopped

Optional: crumbled feta cheese for garnish

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a large bowl, toss the cubed sweet potatoes with 2 tablespoons of olive oil, salt, and black pepper. Spread them in a single layer on a baking sheet. Roast for about 25-30 minutes, or until tender and slightly caramelized, flipping halfway through. Allow them to cool slightly once done.

    Prepare the Dressing: In a small bowl, whisk together the remaining olive oil, maple syrup, Dijon mustard, apple cider vinegar, garlic powder, and a pinch of salt and black pepper. Adjust seasoning to taste.

      Combine the Ingredients: In a large mixing bowl, combine the roasted sweet potatoes, chopped red onion, cherry tomatoes, and chopped pecans. Pour the dressing over the salad and toss gently until everything is well coated.
