1 lb Brussels sprouts, finely shredded

6 slices thick-cut bacon, chopped

1 cup shredded carrots

1/2 cup red cabbage, finely shredded

1/2 cup green onions, sliced

1/4 cup almonds, sliced or slivered

1/2 cup mayonnaise

1/4 cup pure maple syrup

2 tbsp apple cider vinegar

1 tbsp Dijon mustard

Salt and pepper, to taste

Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Once cooked, use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the bacon drippings in the skillet.

    Prepare the Brussels Sprouts: While the bacon is cooking, rinse the Brussels sprouts and remove any damaged leaves. Using a sharp knife or a mandoline slicer, finely shred the Brussels sprouts.

      Sauté the Vegetables: In the same skillet with the bacon drippings, add the shredded Brussels sprouts, carrots, and red cabbage. Sauté for about 3-4 minutes until the vegetables are slightly softened but still crunchy. Remove from heat and let cool slightly.

        Make the Dressing: In a medium bowl, whisk together mayonnaise, maple syrup, apple cider vinegar, Dijon mustard, salt, and pepper until smooth and well combined.

          Combine Ingredients: In a large mixing bowl, combine the sautéed Brussels sprouts mixture, green onions, and almonds. Pour the dressing over the slaw and toss until everything is evenly coated.

            Add Bacon: Gently fold in the crispy bacon pieces into the slaw mixture. Taste and adjust seasoning with more salt and pepper if desired.
