Mango Coconut Popsicles

2 ripe mangoes, peeled and diced

1 cup coconut milk (canned for creaminess)

1/4 cup honey or maple syrup (adjust based on desired sweetness)

1 tablespoon lime juice (freshly squeezed)

A pinch of sea salt

Optional: shredded coconut for garnish

Prepare the Mango Puree: Place the diced mangoes in a blender. Add the lime juice, honey (or maple syrup), and a pinch of salt. Blend until smooth and creamy. Taste and adjust sweetness if needed. Set aside.

    Mix the Coconut Base: In a separate bowl, whisk together the coconut milk and a tablespoon of honey (if desired). This will give it a slightly sweeter and richer flavor.

      Layer the Popsicles: Take your popsicle molds and pour about 1-2 tablespoons of the mango puree into each mold, filling them a third of the way.

        Add Coconut Cream: Gently pour the coconut milk mixture into the molds, filling them until they're about two-thirds full.

          Top with More Mango Puree: Finish by adding another layer of mango puree, filling up to the top. You can lightly swirl the two mixtures with a skewer or knife for a marbled effect.

            Add Garnish (Optional): If you want a bit of texture, sprinkle some shredded coconut on top of the popsicles.

              Insert Sticks: Insert the popsicle sticks into the center of each mold.

                Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until solid.

                  Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out. Enjoy the refreshing tropical treat!
