1 cup coconut milk (canned or carton)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 ripe mango, diced

1/4 cup shredded coconut (unsweetened)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Base: In a medium-sized bowl, whisk together the coconut milk, chia seeds, honey or maple syrup, and vanilla extract until well combined. Ensure that the chia seeds are evenly distributed.

    Refrigerate: Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, or overnight if possible. This allows the chia seeds to absorb the liquid and thicken the mixture into a pudding-like consistency.

      Prepare the Mango: While the chia pudding is setting, peel and dice the ripe mango into small cubes. Set aside.

        Assemble the Pudding: Once the chia pudding has thickened, give it a good stir to fluff it up. In serving glasses, layer the chia pudding with diced mango and a sprinkle of shredded coconut.
