2 ripe mangoes, peeled, pitted, and diced

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 jalapeño pepper, seeded and finely chopped (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tablespoon olive oil

Salt and pepper to taste

Optional: 1 avocado, diced for creaminess

Instructions
 

Start by preparing your ingredients: peel and dice the mangoes, rinse and drain the black beans, chop the bell pepper, tomatoes, red onion, jalapeño (if using), and cilantro.

    In a large mixing bowl, combine the diced mangoes, black beans, red bell pepper, cherry tomatoes, red onion, jalapeño (if using), and cilantro.

      In a small bowl, whisk together the lime juice and olive oil. Season with salt and pepper to taste.

        Pour the lime-olive oil dressing over the salsa mixture and gently toss until everything is well combined and coated.

          If desired, fold in the diced avocado for added creaminess and richness.

            Let the salsa sit for at least 15 minutes at room temperature to allow the flavors to meld together.

              Serve with tortilla chips, on tacos, or as a topping for grilled chicken or fish.
