Mango Basil Chicken Wraps

2 large boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 ripe mango, peeled and diced

1 cup fresh basil leaves, roughly chopped

1 cup mixed greens (spinach, arugula, or lettuce)

½ red bell pepper, thinly sliced

¼ cup red onion, thinly sliced

4 large whole wheat or spinach wraps

¼ cup Greek yogurt or sour cream

1 tablespoon lime juice

Optional: crushed red pepper flakes for extra spice

Marinate the Chicken: In a medium bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Add the chicken breasts, ensuring they're well coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Chicken: Preheat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let it rest for 5 minutes before slicing.

      Prepare the Mango Basil Sauce: In a small bowl, combine the Greek yogurt (or sour cream) with lime juice. Stir until smooth and set aside. You can add a pinch of salt or some crushed red pepper flakes if you like.

        Assemble the Wraps: Lay a wrap flat on a clean surface. Spoon some of the Greek yogurt sauce onto the center, leaving space near the edges. Add a handful of mixed greens, sliced grilled chicken, diced mango, basil leaves, red bell pepper, and red onion.
