1 cup fresh pineapple, diced

1 cup coconut milk (canned or carton)

1/4 cup coconut cream

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon lime juice

A pinch of sea salt

Toasted shredded coconut (for garnish, optional)

Pineapple slices or chunks for decoration (optional)

Instructions
 

Prepare the Pineapple: In a blender, add the diced fresh pineapple and blend until smooth. You may strain it through a fine sieve if you prefer a pulp-free texture.

    Mix Coconut Base: In a mixing bowl, combine coconut milk, coconut cream, honey (or maple syrup), vanilla extract, lime juice, and sea salt. Whisk until well combined and smooth.

      Layering the Pops: Pour a layer of the coconut mixture into each popsicle mold, filling them about 1/3 full. Then, add a layer of the blended pineapple, filling the molds to about 2/3 full. Finally, top off each mold with the remaining coconut mixture.

        Insert Sticks: Gently tap the molds on the counter to release any air bubbles and ensure the layers settle well. Insert popsicle sticks into the center of each mold.

          Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until the pops are solid.

            Unmold and Garnish: To remove the pops, run warm water over the outside of the molds for a few seconds. Carefully pull the pops out. If desired, roll the sides or tops in toasted shredded coconut and add a piece of fresh pineapple on top for a tropical touch.
