1 cup uncooked long-grain white rice

2 cups water or low-sodium chicken broth

1 pound ground beef or turkey

1 packet (1 oz) taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 small onion, diced

2 cloves garlic, minced

1 jalapeño, finely chopped (optional for spice)

1 cup salsa

1/2 cup sour cream

1/4 cup chopped fresh cilantro (for garnish)

Salt and pepper to taste

Tortilla chips, for topping

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, bring 2 cups of water or chicken broth to a boil. Add the rice, reduce to a simmer, cover, and cook for about 15-18 minutes or until the rice is tender and liquid is absorbed. Set aside.

      Brown the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it up with a spatula. If using, add the diced onion and sauté until translucent (about 3-5 minutes). Stir in the minced garlic and chopped jalapeño, cooking for another minute until fragrant.

        Season the Meat: Sprinkle the taco seasoning over the cooked meat mixture, stirring to combine. If the mixture seems too dry, add a couple of tablespoons of water. Let it simmer for 2-3 minutes.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice, seasoned meat mixture, black beans, corn, diced tomatoes, salsa, and half of both the cheddar and Monterey Jack cheese. Mix well to combine all ingredients evenly.

            Assemble the Casserole: Transfer the mixture into a greased 9x13 inch baking dish. Spread it out evenly and top with the remaining shredded cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and slightly golden.

                Let It Rest: Once removed from the oven, allow the casserole to cool for about 5-10 minutes. This will help it set a bit for easier serving.
