Ingredients

1 lb (about 450g) potato gnocchi

2 cups (200g) fresh spinach, roughly chopped

1 cup (240ml) marinara sauce

1 cup (100g) mozzarella cheese, shredded

1 cup (100g) sharp cheddar cheese, shredded

1/2 cup (120ml) heavy cream

1/2 cup (80g) cooked bacon, chopped (or use turkey bacon for a lighter option)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon red pepper flakes (optional for a kick)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil, for garnish (optional)

Instructions

Cook the Gnocchi: In a large pot, bring salted water to a boil. Add the gnocchi and cook according to the package instructions until they float (usually about 2-3 minutes). Once cooked, drain and set aside.

Preheat the Skillet: In a large, oven-safe skillet, heat the olive oil over medium heat.

Sauté Spinach: Add the chopped spinach to the skillet and sauté for 2-3 minutes until wilted.

Combine Ingredients: Reduce the heat to low. Stir in the cooked gnocchi, marinara sauce, heavy cream, cooked bacon, garlic powder, onion powder, red pepper flakes, salt, and pepper. Mix everything well to coat the gnocchi evenly.

Add Cheese: Sprinkle both the mozzarella and cheddar cheese evenly over the top of the gnocchi mixture.

Bake: Transfer the skillet to a preheated oven at 375°F (190°C) and bake for about 15-20 minutes, or until the cheese is bubbling and golden brown.

Garnish and Serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh basil before serving.
