For the Cheesecake Base:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Lime Cheesecake Layer:

16 oz cream cheese, softened

2/3 cup granulated sugar

¼ cup fresh lime juice (about 2-3 limes)

Zest of 2 limes

1 tsp vanilla extract

3 large eggs

For the Lime Mousse Topping:

1 cup heavy cream

¼ cup powdered sugar

2 tbsp fresh lime juice

Zest of 1 lime

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.

        - Press the mixture into the bottom of a 9-inch springform pan, forming an even layer. Bake for about 10 minutes, then remove from the oven and let cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add granulated sugar and mix until well combined.

                - Add fresh lime juice, lime zest, and vanilla extract, mixing until incorporated.

                  - Add the eggs one at a time, mixing on low speed until just blended after each addition. Do not overbeat.

                    - Pour the cheesecake mixture over the cooled crust and spread evenly.

                      Bake the Cheesecake:

                        - Bake in the preheated oven for 45-50 minutes, or until the edges are set and the center has a slight jiggle.

                          - Turn off the oven, crack the door open, and let the cheesecake cool inside for about 1 hour to prevent cracking.

                            Prepare the Lime Mousse:
