Light Greek Yogurt Lemon Cake

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup granulated sugar

½ cup light Greek yogurt

¼ cup unsalted butter, softened

2 large eggs

¼ cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

1 tsp vanilla extract

¼ cup powdered sugar (for glaze, optional)

1-2 tbsp fresh lemon juice (for glaze, optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Sugar Mixture: In a large bowl, use a hand mixer or stand mixer to cream together the granulated sugar and softened butter until light and fluffy, about 3-4 minutes.

        Combine Wet Ingredients: Add the light Greek yogurt, eggs, fresh lemon juice, lemon zest, and vanilla extract to the sugar mixture. Mix until fully combined and smooth.

          Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mix, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

            Pour & Bake: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

              Cool Down: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
