1 pound boneless, skinless chicken breast

6 cups low-sodium chicken broth

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 cup uncooked orzo pasta

Juice of 2 large lemons

Zest of 1 lemon

1 teaspoon dried oregano

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 cup fresh spinach, chopped

2 tablespoons olive oil

Fresh dill or parsley for garnish

Cook the Chicken: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove chicken, allow to cool slightly, then shred using two forks.

    Sauté the Vegetables: In the same pot, add the remaining tablespoon of olive oil. Sauté the diced onion, carrots, and celery over medium heat for about 5 minutes or until they start to soften. Add the minced garlic and cook for an additional minute until fragrant.

      Prepare the Broth: Pour in the chicken broth and bring to a gentle boil. Stir in the orzo pasta, dried oregano, salt, and black pepper. Reduce heat to a simmer and cook for about 8-10 minutes, or until the orzo is tender.

        Incorporate Chicken: Return the shredded chicken back to the pot. Stir in the lemon juice and lemon zest. Cook for another 2-3 minutes to heat through.

          Finish with Spinach: Just before serving, add the chopped spinach and stir until wilted. Adjust seasoning if necessary.
