1 cup ricotta cheese

1/2 cup milk

3 large eggs

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice

1 tablespoon vanilla extract

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Butter or oil for cooking

Optional toppings: fresh berries, maple syrup, whipped cream, or powdered sugar

Instructions
 

Prepare the Wet Ingredients: In a large mixing bowl, whisk together the ricotta cheese, milk, eggs, lemon zest, lemon juice, and vanilla extract until the mixture is smooth and creamy. Set aside.

    Combine the Dry Ingredients: In another bowl, mix the all-purpose flour, sugar, baking powder, baking soda, and salt until evenly combined.

      Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

        Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to lightly coat the surface.

          Cook the Pancakes: Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles start to form on the surface and the edges look set. Carefully flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.
