Lemon Garlic Hummus Veggie Wraps

1 red bell pepper, julienned

1 cup spinach or mixed baby greens

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1 tablespoon olive oil

1 teaspoon lemon juice

Salt and pepper, to taste

Optional: crumbled feta cheese or sliced avocado for extra creaminess

Prepare the Veggies: Start by prepping your vegetables. Rinse and slice the cucumber, bell pepper, and cherry tomatoes. Shred the carrots and thinly slice the red onion. In a large bowl, combine all the vegetables (carrots, cucumber, bell pepper, spinach, cherry tomatoes, and red onion).

    Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle this dressing over the veggie mixture and toss gently to combine, ensuring the vegetables are evenly coated.

      Spread the Hummus: Lay a tortilla flat on a clean surface or a large cutting board. Spread about 1/4 cup of the lemon garlic hummus evenly over the tortilla, leaving about 1 inch around the edges.

        Add the Veggies: Spoon the dressed vegetable mixture generously over the hummus. If you're using feta cheese or avocado, sprinkle them on top for added flavor and creaminess.
