2 boneless, skinless chicken breasts

8 oz penne pasta

3 tablespoons olive oil

Juice of 1 large lemon (about 3 tablespoons)

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)

Salt and pepper, to taste

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Marinate the Chicken: In a small bowl, combine 2 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, dried dill, salt, and pepper. Place the chicken breasts in a shallow dish or a ziplock bag and pour the marinade over them. Let the chicken marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

      Roast the Chicken: Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C). Once done, let it rest for 5 minutes before slicing into strips.

        Cook the Pasta: While the chicken is cooking, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

          Prepare the Sauce: In a large skillet over medium heat, add the remaining 1 tablespoon of olive oil. Once hot, add the cherry tomatoes and sauté for 3-4 minutes, until they begin to soften. Stir in the heavy cream and bring to a gentle simmer.
